This variety is present in the areas of Murgia dei Trulli and Grotte, in particular in the municipalities of Castellana, Conversano , Putignano and Alberobello, Polignano and Monopoli. The Simona variety is known for its sensorial, slightly spicy tone of the oil which means that it has traditionally been destined for richer markets “’for children….’, ‘for sick people….’ and was characterised as ‘mill oil ….’; with reference to the oil mill operator’s habit of keeping the best quality oil for himself. This cultivar is also resistance to the attack of the oil fly, and its easy operation during the harvesting phase[1]”
